Step - 01

Harvest & Washing

It all starts with the careful picking of olives. Once harvested, they are washed in cold water after a thorough sorting to remove leaves and debris. This process ensures healthy raw material, essential for quality oil.

Step - 02

Crushing & Mixing

The olives are then crushed to obtain a homogeneous paste. This paste is slowly mixed, without heating, to release the oil contained in the cells.

Extraction

By centrifugation or mechanical pressing, the oil is separated from the water and plant residues. This "cold" method preserves all the aromas and nutrients, without additives or refining.

Separation & Storage

Finally, the oil is separated from the water by natural decantation or vertical centrifugation before being stored, ready for bottling.
