Place the whole eggplants in the oven at medium heat. Bake for about 20–25 minutes until the skin peels off and the flesh becomes very soft. Blanch the tomato to peel it, then cut it into small pieces. Peel the eggplants and blend them with the tomato. Put the mixture into a bowl, add finely chopped onions and garlic. Season with salt and pepper, then drizzle in olive oil while stirring until smooth. Chill for at least 10 minutes. Add basil or parsley just before serving.
