Wash and peel the potatoes. Cut them into pieces (not too fine) and fry in olive oil. Season with salt as they cook. When the potatoes are cooked, add the olive oil and eggs and mix quickly before the omelette forms. As soon as you can move the tortilla around in the pan, turn it over. When the second side is cooked, slide it onto a plate and serve with a drizzle of olive oil.
